Italian Sausage and Squash Soup

Okay, everybody, it’s late. I know! Where does the day go? But, I promised myself I’d post to this blog every single day for a year. I’ve been very close to the next day more than a few times, but, so far, I’ve managed to keep my promise!

I was all ready to post a beautiful card, featuring Faux Silk, but then I talked with my upline, Ruth, and told her about the delicious soup we were going to have for dinner! She wanted me to post the recipe so her husband, Mike, could make it for them! So, Mike…Ruth…and everybody else…soup’s on! Look for the Faux Silk card tomorrow!

Italian Sausage and Squash Soup

1 lb. bulk Italian sausage

1-1/2 cups diced onion

2 tablespoons minced garlic

1 butternut squash peeled, seeded and cut into 1″ chunks (approx. 1-1/2 lbs)

1/4 teaspoon red pepper flakes

2 cups chicken broth

2 cups water

1 cup red pepper, diced

1/2 cup heavy cream

1 teaspoon ground dried sage (use fresh if on hand…3-4 sprigs)

1 teaspoon sugar

2 cups baby spinach (packed)

3 tablespoons brandy

salt and pepper to taste

Brown sausage over medium heat. Drain on paper towel and set aside. Saute the onion and garlic in 1 tablespoon olive oil or pan drippings, about 5 minutes or until soft. Increase heat to medium high; add squash and pepper flakes. Saute 5 minutes. Stir in broth and water and bring to a boil. Simmer until squash is very soft, about 10 minutes. Puree soup in batches in a blender or food processor (Be careful! It’s hot! Use small batches.) Put back in pot, then add red pepper, cream, sage, and sugar; simmer until red pepper is tender — about 5 minutes. Stir in the spinach, brandy, and sausage; simmer until the spinach wilts and the sausage is heated through (about 2 minutes). Season to taste with salt and pepper!

I’ll warn you; the price of butternut squash was about the same as a very nice steak but this soup was truly delicious!

Pair it with a nice red wine — a Malbec works — and some homemade bread (store-bought will do in a pinch) and you’ve got yourself a heavenly meal! Guten appetit!
